Bananas: Store at room temperature until ripe. When they are yellow, they can be placed in the fridge. The skins will brown but the fruit remains ripe for several days. Over ripe bananas can be peeled and frozen for future use in smoothies and in baking.
Apples and pears:Store apples in the fridge just above freezing. In these conditions, they will store for several weeks to months. Do not store them in proximity to tomatoes or bananas because they will become overripe within a few days. Pears purchased from the store often need to sit at room temperature for a few days to ripen properly.
Citrus: Includes grapefruit, oranges, tangerines, etc. Store at 40 to 50 degrees to preserve the for several more days after purchase. Citrus can be preserved by canning, freezing and drying.
