Berry Delicious Summer Salad8 cups mixed salad greens

2 cups fresh blueberries

1/2 cup crumbled Gorgonzola or blue cheese

1/4 cup chopped and toasted walnuts or pecans

Bottled vinaigrette

Toss together the first 4 ingredients; drizzle with desired amount of vinaigrette, tossing gently to coat.

Serves 6 to 8.

Spinach-Grape Chopped Salad

2 Tbsp pine nuts

1 6-oz. package fresh baby spinach, thoroughly washed

1 cup seedless grapes, sliced

1/4 cup crumbled feta cheese

1/4 cup raspberry-walnut vinaigrette

Heat pine nuts in a small pan over medium high heat, 5 minutes or so until toasted and fragrant.

Coarsely chop spinach. Toss together spinach, grapes, feta, and vinaigrette in a serving bowl. Sprinkle with pine nuts and serve immediately.

Serves 4.
