Kaiser's Bar B-Q may not be the fanciest restaurant you've ever seen, but Greggg Chamberlain more than makes up for it with his authentic Texas Bar B-Q. The huge smokers out back will tell the story of how Greggg cooks and smokes his chicken and briskets or prepares the pork for his outstanding pulled pork sandwich.
He goes to great lengths to bring Texas Bar B-Q to Utah. How's this for dedication? He drives his big truck back home to Texas only to fill it up and haul it back with tons of wood including oak, mesquite and pecan. Then he swings by Mexico to pick up some of the handmade Mexican iron fence, artifacts and art that he sells in his small restaurant at 962 S. 300 West in Salt Lake City.
When I asked him how he ended up in Utah. . . tell me if you've heard this before. He landed in Park City and in those days skied Park West, fell in love and voila. . . a local was born.
Gregg has to be one of the hardest working guys in the restaurant business. He thinks nothing of getting up between midnight and 3 a.m. to fire up the smokers. He also does a solid business with take-out every day, including big orders for parties. A friend of mine ordered his Bar B-Q for a family reunion.
When you're sitting at one of the picnic benches waiting for your order, you can't help but notice the small white plates that adorn the walls. Gregg started with a plate signed by Jerry Sloan of the Utah Jazz. He was so excited when Jerry came into the restaurant where he was working that he grabbed a plate and asked him to sign it. Now it's become a tradition with locals, including former Utah Governor and now Ambassador Jon Huntsman.
I saw one plate that read, "I've got two loves in my life, Kaiser's Bar B-Q and my wife. In that order." Believe it or not this gentleman signed the plate.
