Guac is a game day favorite, but this recipe is different. Think of it like Asian-styled guacamole.
Chef Jeff Jackson shared why you should make this edamame guacamole over traditional guac.
Edamame Guacamole With Crispy Wonton Chips
INGREDIENTS
For the Edamame Guacamole
- 2 cups shelled edamame, cooked and cooled
- ¼ cup cilantro
- Zest and juice of 1 lime
- 2 green onions, roughly chopped
- 2 cloves garlic
- 1 tablespoon fresh ginger, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon neutral oil
- 2 tablespoons tahini
- 2 to 4 tablespoons water, as needed
- Salt and pepper, to taste
- Everything Bagel seasoning
- Wasabi (optional)
For the Wonton Chips
- 12 wonton wrappers
- Avocado oil spray
- Salt, to taste
METHOD
- Add the edamame, cilantro, lime zest, lime juice, green onions, garlic, ginger, soy sauce, sesame oil, neutral oil, tahini, water, salt and pepper to a food processor.
- Process for about 3 minutes, stopping as needed to scrape down the sides, until the mixture is smooth and creamy.
- Add additional water, 1 tablespoon at a time, if needed to reach your desired consistency.
- Taste and adjust seasoning with additional salt, pepper, or lime juice if desired.
- To make the wonton chips, cut each wonton wrapper into triangles.
- Arrange the wonton pieces in a single layer on a baking sheet.
- Lightly spray the wrappers with avocado oil and sprinkle with salt.
- Bake at 370°F for about 6 minutes, or until golden brown and crisp.
- Transfer the edamame guacamole to a serving bowl.
- Garnish with Everything Bagel seasoning, green onions and a small amount of wasabi, if desired.
- Serve with the crispy wonton chips.
