This is Fred Ball for Zions Bank, speaking on business.

I was reading recently about how Mexican food can be a really healthy dining option. If you frequent a fine restaurant and know how to order, you will enjoy tasty food and do your body a great service.

Barbacoa Mexican Grill is such an establishment. It serves meals that are prepared with fresh, wholesome ingredients, and you get to pick the selection of items that you enjoy. Lettuce, tomatoes, black or pinto beans and salsa can all be relished and still help you watch your intake.

From any Barbacoa location, you can watch as your entrée is prepared in front of you. As it moves down the line, you choose the meat (or no meat), and the other ingredients. You can be assured that what you choose is of the finest quality, freshness and is guilt- free food at a nice price.

I enjoyed my visit with Richard Hemsley at Barbacoa. He explained to me how the restaurants are all locally owned and operated. They pride themselves on their fresh, nutritious, high-quality food. He showed me a map with the locations in Salt Lake and Utah counties. There are stores in Salt Lake City, Fort Union, Olympus Hills, Draper, West Jordan and Highland. My favorite location in Holladay recently closed due to the city's construction and road improvements in the area. (The employees at the Zions Bank office across the street are all disappointed.)

Barbacoa offers breakfast, lunch and dinner. The breakfast menu was a recent discovery for me. You can enjoy breakfast burritos, coffee and juice. You can even order menu items online with an easy-to-use menu and ordering process. This is a popular feature for those who love the food but would like to enjoy it at home with the family.

Yes, it's nice to know that at Barbacoa you can find great food that you can feel good about.
