This is Chris Redgrave for Zions Bank Speaking on Business.

Here in the West, we're known for having the pioneer spirit, of never giving up and always pushing forward. This thought process has been a driving force for Chris and Kim Summerhays, the owners of Cowboy Grub Restaurant, now located at 3336 South 2300 East in Millcreek.

Cowboy Grub Restaurant is known as a family-friendly eatery with a variety of food at a reasonable price point. Everything is also made from scratch, including breads, sauces and four soups every day. There's also a salad bar with fresh, hand-cut veggies, and this was one of the first salad bars west of the Mississippi. There's family influence throughout the menu, like the desserts, made similar to grandma's. The sourdough rolls come from a 100-year-old sourdough start.

Kim says the pioneer spirit has helped Cowboy Grub Restaurant reach their 40th anniversary year. They've faced some challenges in the last year, including the need to find a brand new location. They had great support from customers as they searched for a new home. They took this as an opportunity to renovate the restaurant and update their equipment and operations. They also revamped their menu and brought the most popular dishes with others now offered as specials. Their customers came back before they even formally announced they were open again earlier this year.

The new restaurant allowed Cowboy Grub to expand their bakery offerings. They have frosted sugar cookies available for any occasion that are hand-rolled and hand frosted. You can call and special order them. Their baked goods are also available at select grocery stores. There also offer gift baskets for all occasions but they're especially popular during Christmas

Today, the owners remain committed to continuing the legacy of providing the best possible customer experience at Cowboy Grub.
