This is Fred Ball for Zions Bank, speaking on business.

When I heard the Mayan Restaurant at the Jordan Commons complex in Sandy changed ownership, I thought it would be a good time to revisit this large and popular eatery.

I met Keith Marshall, who, with his partner Mike Evans, has started some dramatic menu changes and has exciting plans to re-establish the Mayan Restaurant's excitement, entertainment and family-friendly environment as well as its cuisine.

The show, a highlight of the experience, is still exciting. It features divers who plunge three stories into a beautiful pool, fire dancers in authentic costumes performing in a jungle setting and Mayan and Inca warriors who mingle with the crowd and visit with diners.

But the food is what Joyce and I wanted to sample. Keith emphasized to us that he has already tweaked the menu but there are still more changes to be made. A chef from California who is widely regarded for his Mexican culinary talents has been working with the kitchen crew and management to create exciting new entrees. Some of the recipes are 100 years old and have been passed down from the chef's grandmother in Mexico.

Joyce and I started with an unexpected appetizer: sweet corn tamales covered with fresh fire-roasted tomatillo sauce and créme Mexicana. We both enjoyed its sweet and cool taste. My entrée was chile verde. The lean pork with fresh fire-roasted green chilies, tomatoes, onions and spices was delicious. Joyce opted for the chimichanga. The flour tortilla was stuffed with Jack cheese and shredded chicken, and Joyce loved it!

The Mayan is located right next to the large Megaplex theatre complex so the restaurant will now take reservations and coordinate service times so patrons make it to the movie they plan to enjoy after dinner.
