The groatmeal breakfast that will fill your morning with fiber

Suzy Bunker has a recipe that does that, and also puts focus on something we need more of: fiber. She shared how to make groatmeal and ways to get even more fiber in your day.

How to Add Fiber Into Everyday Eating

Groatmeal

INGREDIENTS

  • 1 cup oat groats
  • 2¼ cups water (for pressure cooker) OR 3 cups water (for stovetop)
  • Pinch of salt
  • 2 teaspoons coconut oil
  • Almond milk or milk, to taste
  • Sweetener of choice, to taste: (monk fruit sweetener, honey, maple syrup, brown sugar)
  • Optional: 1 scoop naturally sweetened protein powder
  • ½ cup raspberries
  • 1 tablespoon chia seeds

METHOD

  1. Add the oat groats, water, salt and coconut oil to a pressure cooker.
  2. Cook on high pressure for 20 minutes.
  3. Release the pressure and stir the cooked groats. The mixture should be tender and chewy with most of the liquid absorbed.
  4. Add almond milk or milk as desired for a creamier texture.
  5. Sweeten to taste with monk fruit sweetener, honey, maple syrup or brown sugar.
  6. If desired, stir in a scoop of protein powder for additional protein and natural sweetness.
  7. Transfer the groatmeal to serving bowls and top with raspberries and chia seeds. Serve warm.

Stovetop Method:

Combine the oat groats, three cups water, salt and coconut oil in a saucepan. Bring to a boil, reduce heat, cover and simmer for about 45 minutes or until the water is mostly absorbed and the groats are tender. Continue with steps 4 through 7.

Make a batch ahead of time and reheat portions throughout the week for a quick, fiber-packed breakfast.
