When you walk into Caffe Ibis Roasting Company, located in the beautiful Cache Valley, the aroma is unbelievable. It's a mixture of caramel, citrus, coffee and chocolate that's hard to describe. Owner Sally Sears, who started the company in partnership with her husband, Randy Wirth, is well known in this business and says she has been influenced by the Italians who have a history of coffee roasting dating back hundreds of years. Caffe Ibis is so committed to excellence, they roast coffee in a very traditional fashion where the roasters actually listen for the first bean to crack, so they know exactly when to stop roasting.

Randy and Sally were one of the first in Utah to start an artisan and socially responsible coffee roasting company in the 80s. In the 30 years plus, they've grown Caffe Ibis to include approximately 600 customers and 35 employees now doing business worldwide. They were before their time, as we're now experiencing what they call the third wave of baristas and roasters. Specialty coffee shops and roasteries are popping up everywhere that identify with the mission of Caffe Ibis.

Caffe Ibis is known throughout the industry as having an amazing dedication to their partners. Her farm partnerships are legendary. The company imports coffee beans from 26 countries with a focus on Triple Certified, Organic, Fair Trade and Smithsonian Shade Grown "Bird-Friendly" coffees. Their fresh roasted specialty grade Arabica coffee is found in hundreds of coffee shops and retail outlets throughout the Americas.

Sally has also been motivated by a movement called Café Feminino, which started in Peru, and supports female coffee producers. It launched with 76 members and has now grown to 800. Sally bought into the mission of Café Feminino, believing this would improve women's lives.
