This is Fred Ball for Zions Bank, speaking on business.

It's not unusual to walk into the Spotted Dog Restaurant in Springdale and see the same customers on different nights during the week. The eatery's location on the outskirts of Zion National Park has made it a draw for both locals and tourists alike, and the restaurant is often full to overflowing.

Chef Jeff Crosland, who took over ownership of the restaurant in 2006, has 17 years of experience in the restaurant industry as well as training from the Le Cordon Bleu curriculum of Paris. Since taking over the restaurant, he has completely redesigned the menu, the service structure and the core of how the business operates.

Jeff classifies Spotted Dog Restaurant as fine dining in a casual atmosphere. The daily specials are popular, and the nightly cuisine changes based on outside factors such as temperature and time of year. Diners enjoy visiting the restaurant frequently to sample the various ethnic foods offered, including regional American, Mediterranean, Thai, Italian and French dishes.

In 2007, Spotted Dog Restaurant served more than 70,000 visitors. Jeff enjoys spending time out on the floor chatting with customers to build relationships with them. He has met people from all over the world including Africa, India, Germany, Switzerland, England and France.

The real reason for the restaurant's success, Jeff says, is his crew. The staff takes a team-oriented approach to their work and maintains a positive attitude, which diners recognize and appreciate. Constant education on better ways to assist guests is also essential.

Jeff's intent is for all customers to enjoy Spotted Dog Restaurant to the highest extent possible. He hopes the ethnic menu selections can be a draw for customers both locally and internationally.
