One of Park City's biggest celebrations is almost here...Halloween on Main Street. The event is for the entire family, including plenty of Halloween activities, trick or treating, and great food. The Eating Establishment shows us how to make one of their dishes.

RED SNAPPER WITH MINT, LIME AND RUM SAUCE

2 8oz. fillets of red snapper

2 oz. of olive oil

2 oz. of lime juice

4 oz. of vegetable stock

10-12 leaves of fresh mint

2 oz. of rum

2 oz. of unsalted butter

DIRECTIONS: Heat the oil in a non stick pan place the fish on pan if fish has the skin on placed skin down cook for about a minute turn over and cook for another minute. Take the fish off pan and add the butter and mint wait for the pan to heat and add the rum and cook till the alcohol burns off. Add the stock and lime to the pan and bring to boil add fish back to pan and cook for about a minute.
