Culinary school launches baking, pastry program

PORT HURON, Mich. (AP) — The sweet smells of success will be wafting through the halls and classrooms of the Culinary Institute of Michigan this fall.

The school is launching a baking and pastry program, according to the Times Herald of Port Huron ( http://bwne.ws/UzOjS7 ).

The baking pastry arts program will give a first group of 24 students an education in the art of the dessert.

"We want to get the program started and do it right," said Chef Thomas Recinella, head of the culinary program associated with Baker College of Port Huron.

Students will learn about making pastries and baking. They can earn a two-year associate degree or enter a certificate program.

The associate degree program includes general education classes and three confectionery classes.

"Baking and pastries are two different arts," Recinella said. "In Europe, they're treated separately. In the United States, you need to understand all of the disciplines."

Recinella said the artistic side of baking is nothing new to fans of cooking reality shows such as "Cake Boss." The show centers on elaborate cakes and centerpieces.

"There's a class specifically for centerpieces," Recinella said.

Students also will learn to make plated desserts, he said.

"There are a lot of bakeries, but not every bakery has plated desserts," Recinella said. "Plated desserts are typically made by pastry chefs."

The culinary institute already offers a two-year associate degree in culinary arts and a two-year associate degree in food and beverage management. The first class will graduate in spring 2015.
