SALT LAKE CITY — Everybody loves a good three-day weekend and with Memorial Day on the horizon, there are plenty of activities and things to do in Utah to celebrate. So along with decorating graves and remembering your loved ones, here is a list of five other activities to fill your time.

Eagle Mountain Pony Express Days

The Pony Express Days is advertised as the biggest event of the year in Eagle Mountain, and they certainly have a lot of things planned. And by a lot of things, I mean over 40 events in a 12-day period.

The Pony Express Days will have a rodeo, a demolition derby, a Chris Cagle concert, a carnival, and a fair displaying local 4H exhibits. It will take place from May 21 to June 3. For a more complete list of the times for the events, click here.

Escalante culture plays

The Escalante Heritage Center presents a series of original plays each year during Memorial Day weekend to highlight and celebrate the area's rich culture and history. One of the plays tells the story of when the early settlers didn't have an American flag for the 24th of July celebration, so they raised a Navajo blanket on the flagpole for the day.

The plays and festivities will take place at the Escalante High School and Veterans Memorial on Saturday from 8 a.m. to 7 p.m.

Day out with "Thomas the Train"

If you have little kids, siblings, nieces, nephews, or if you still feel like a kid, the "Day out with Thomas the Train" will be an amazing activity for your weekend. The event will take place on the Heber Valley Railroad aka the "Heber Creeper" and the tour provides an interactive experience riding the train. Each train stop offers different entertainment including a petting zoo, miniature golf, a bounce house, and magic show.

The Thomas the Train rides will take place from Friday until May 27. Rides run every 45 minutes from 10:30 a.m. to 6 p.m.

Cowboy poetry and western music festival

The 8th annual Cowboy Legends Cowboy Poetry and Music Festival celebrates 135 years of ranching history on Antelope Island. The festival has live country western performances, cowboy poetry, wagon and buggy rides, an open mic karaoke night and allows camping. And, I'm sure there will be a lot of "Yee-hawing."

The event will take place from Friday to May 27. Take the whole family to enjoy the outdoors and the great "Old West."

Homestead Resort crawfish festival

The Homestead Resort is hosting the 2nd Annual Crawfish Festival featuring an authentic crawfish boil with fresh crawfish, blue crab, and live New Orleans-style music. Having spent some time in the South, I can testify that Cajun food is amazingly tasty and if you haven't tried it, you should.

The Crawfish festival will take place Saturday from 3 to 7 p.m. at 700 N. Homestead Drive in Midway.
