Easter is one of those food holidays where there's plenty of flexibility in preference and locale. Peeps or no Peeps? Ham or lamb? Dine in or out? Brunch or supper?

For me, it's no Peeps, lamb, dine in, and, brunch. In fact, I can't think of a better holiday to showcase my family's favorite Dutch Baby Pancake.

A Dutch Baby Pancake is a great way to incorporate fruit into a meal, as well as getting kids to participate in meal making. This version is made with strawberries, but feel free to substitute other berries, such as blueberries or raspberries. You can also use apples for a delicious twist!

Easy Easter brunch

Ingredients:- 6 tablespoons unsalted butter

  • 1/2 cup unbleached all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon kosher salt
  • 1/2 cup whole milk
  • 3 large eggs, beaten
  • 1 cup strawberries, hulled and cut into slices
  • 2 teaspoons firmly packed light brown sugar
  • 2 teaspoons fresh lemon juice
  • Powdered sugar, for serving

1. Preheat the oven to 375 degrees. 2. Put 4 tablespoons butter in a 10-inch ovenproof skillet. Heat in the oven until the butter is melted, about 2 minutes. Pour out and reserve 2 tablespoons of the butter; leave the remaining butter in the pan. 3. In a bowl, whisk the flour, granulated sugar, and salt. Make a well in the center and pour in the milk, eggs, and reserved 2 tablespoons melted butter. Whisk just until combined. Pour into the hot frying pan. Return to the oven and bake until the edges of the pancake are puffed and golden brown, about 20 minutes. 4. Meanwhile, in another skillet over medium heat, melt the remaining 2 tablespoons butter. Add the strawberries, brown sugar, and lemon juice and cook, stirring occasionally, until the strawberries have softened and the brown sugar is melted, about 3 minutes. Remove from the heat. 5. Remove the pan from the oven. Pour the strawberry mixture into the center of the pancake. Dust lightly with powdered sugar. Cut into wedges and serve hot, directly from the pan.
