Spicy Ground Turkey-Zucchini Stir-Fry

Serves 4

Sauce Ingredients:
3 Tbsp tamari (gluten-free soy sauce)
1 Tbsp grated fresh ginger
1 Tbsp sambal oelek or Asian chili-garlic sauce
2 tsp Asian sesame oil

Stir-Fry Ingredients:
1 lb zucchini or yellow summer squash
2 Tbsp canola oil, divided
1 lb ground turkey
Salt and freshly ground black pepper
1/4 cup thinly sliced green onions
1 Tbsp toasted sesame seeds
Shirataki (Japanese konjac yam) noodles, for serving

Instructions: To make the sauce, in a small bowl, combine all the ingredients and set aside. To make the stir-fry: Cut each zucchini in half lengthwise, then thinly cut on a mandoline and then into matchsticks. In a large frying pan over medium-high, add 1 tablespoon oil. Add the ground turkey and season with salt and pepper. Cook, stirring occasionally, until no pink remains, about 8 min. Using a slotted spoon, transfer turkey to a plate. Add the remaining 1 tablespoon of oil to the pan, add the zucchini, season with salt and pepper and cook until just tender and slightly browned, 3-5 min. Return the turkey to the pan, add half the green onions, add the sauce, and toss until the sauce is well-incorporated and the zucchini begins to look glossy, about 30 seconds more. Garnish with the remaining green onions and sesame seeds and serve over shirataki noodles.
