Veggie Bomber Salad
Serves 5
Ingredients
5 c Fresh Baby Spinach
2½ c Spring Mix Lettuce
1¼ c Red Bell Pepper,Diced
1¼ c Garbanzo Beans,Drained
1¼ c Cucumber,Sliced,Half
5 T Fresh Avocado,Diced
1½ c Cherry Tomatoes
1¼ c Matchstick Carrots
1¼ c Fresh Sliced Mushrooms
2½ ea Fresh Lemons,Halved
5 tsp Olive Oil
2½ ea Greek Pita Bread,Half
Directions:
1. Divided equally, place lettuces in bowl, arrange all other items around the bowl. Dash with olive oil and squeeze lemon juice over the top.
2. Warm pita bread and cut in half.
