Harmons cheeseball chili:
Makes 8 servings
Prep time: 30 minutes
Cook time: 30 minutes
Ingredients:
- 1 yellow onion, diced medium
- 1 tablespoon minced garlic
- 2 tablespoons ground cumin
- 1 teaspoon ground coriander
- 1 Harmons jalapeno cheeseball
- 2 cups rough chopped Harmons pulled rotisserie chicken
- 2 cups Harmons low sodium chicken stock
- 2 cans Harmons organic great northern beans drained
- 1 can Harmons organic garbanzo beans drained
- 1 can shoepeg corn drained
- Juice from 1 fresh lime
- 1/8 tsp black pepper
- 2 tsp kosher salt
- A quarter cup fresh chopped cilantro
- Tortilla strips or chips
Directions:
- In a stock pot or soup pan on medium heat, sweat onions. Once onions become fragrant and translucent, about 3-5 minutes, add garlic and sweat for another 30 seconds.
- Reduce heat to medium low and add cumin and coriander to onion and garlic until it forms a fragrant paste.
- Add to warm pan green onion cheeseball and work apart until melted. Once melted, on low heat, whisk in chicken stock.
- Add the lemon juice, chicken, beans and corn. bring to a boil and then reduce to simmer. Stir in pepper and sat and adjust to taste. Serve hot- garnish with cilantro and tortilla chips.
