SHERATON CHOCOLATE MOUSSE
Ingredients
2 cups heavy cream
4 egg yolks
1 pinch of sea salt
3 tbsp sugar
1 tsp vanilla
7 oz bittersweet chocolate, chopped
Instructions
• Heat ¾ cup of heavy cream in a saucepan.
• Whisk together egg yolks, sugar, and salt in a separate bowl; then add the mixture to the hot cream, whisking slowly until combined.
• Pour the mixture through a chinois, or a fine mesh strainer, into a bowl and add the vanilla.
• To melt the chocolate, use a double boiler. If you don’t have one, you can use a metal mixing bowl placed on top of a sauce pan. Place a couple of inches of water in the pan below.
• Once the chocolate is melted, whisk the custard mix into the melted chocolate until it’s smooth. Be sure to let the chocolate custard mix cool.
• Beat remaining 1 ¼ cups of cream until you achieve stiff peaks; then gently fold the whipped cream into the chocolate custard.
• Serve chocolate mousse in individual glasses or serving dishes, top it with sprinkles, berries, or a drizzle of chocolate to make it look even more festive!
