Chicken Cilantro Omelet Kolache

Omelet recipe: 1/2 Red onion 2-3 poblano peppers 1 jalapeño Salt and pepper to taste Granulated garlic to taste 2-3 grilled chicken breasts 5 cups eggs 1 bunch cilantro 5 ounces Shredded cheddar cheese

Chop vegetables into small pieces. Put onion, peppers, and jalapeños into pan with a little bit of oil. Season with salt, pepper, and granulated garlic. Let the veggies sweat for a few minutes until you see the onions started to lose it's "white" color. Add cut up grilled chicken breast. Mix together and let sit for another minute or two. Add cracked, unstirred eggs to pan. Slightly mix the ingredients together without breaking egg yolks. Let sit and cook through. Mix by lifting the cooked bottom parts to the top. Let sit again. Do this until all eggs are cooked. Put cooked eggs onto a cookie sheet to cool. Once the filling is no longer hot, put it into a bowl and add cheese and freshly chopped cilantro. Toss together. Scoop a portion into your kolache dough. Close the dough into a ball and cook in the oven for the appropriate time. Now you have a delicious Chicken Cilantro Omelet Kolache!
