SALT LAKE CITY — KSL's Brooke Walker had dinner with a local Utah family to check up on the amount of veggies the family was serving. She brought along dietician Kathleen Nielsen to give her two cents.
"It's the biggest problem at family dinner, not enough veggies," Nielsen said.
Nielsen said every meal should include a few vegetables.
"The first thing is you need to be sure to include veggies at lunch," Nielsen said. "A lot of times we don't do that and then it's hard to get to and a half cups at dinner."
Nielsen said there are sneaky ways to get a family to eat more vegetables.
"You can include your vegetables in other foods like in a meatloaf, you can grate some carrots, they won't show up at all, they won't know they're in there," Nielsen said. "You can put spinach in a smoothie."
