Poutine Tots Serves: 4 to 6

Ingredients:
1 pound frozen tater tots
2 tablespoons butter
1 tablespoon grapeseed oil
2 shallots, frenched
½ teaspoon dried thyme
½ teaspoon dried rosemary
Salt and pepper
3 tablespoons flour
2 cups good quality beef stock
6 ounces cheese curds
Parsley, chopped for garnish

Directions:
Cook tater tots to package directions.
In a high sided skillet over medium heat, melt the butter and add the oil. Once butter is melted add the shallots, dried herbs, salt and pepper. Cook stirring frequently for about 3 minutes, or until the shallots are nice and soft. Add in the flour and stir, if the pan is dry add more oil or butter to make a roux. Cook the roux with the shallots for about 3 more minutes. Add the beef stock a little at a time stirring to make sure the roux incorporates with the stock. Bring back up to boil for at least one minute to cook out the flour.
To assemble the poutine, place half of the tots in the bottom of a large bowl. Add half the cheese and then smother with half the hot gravy. Repeat with the rest of the tots, then the cheese, and finish the gravy. The cheese will start to melt. Garnish with chopped parsley and enjoy.
