Mediterranean Black Bean Pasta Salad Serves 4

8 oz. uncooked black bean pasta
1 cucumber, diced
1 pint cherry tomatoes, halved
½ cup Kalamata olives
½ red onion, sliced

Dressing:
¾ cup extra virgin olive oil
¼ cup red wine vinegar
1 teaspoon lemon juice
½ teaspoon oregano
½ teaspoon rosemary
4 small oven roasted garlic cloves
¼ teaspoon salt
¼ teaspoon black pepper

Directions:
Cook pasta according to directions on box. Drain pasta and set aside.
While pasta is cooking, combine all dressing ingredients in a small bowl. Blend with an immersion blender until well combined. Set aside.
In a large bowl, combine cooked pasta, cucumber, tomatoes, olives, and onion. Drizzle with desired amount of dressing and toss to combine.
