Chef Jeff Crosland approaches a plate as a painter would a canvas, and with each creation, he challenges himself to create a masterpiece. Jeff's newest restaurant venture, Parallel Eighty-Eight in Springdale, reflects his creative energy and drive for excellence.

Jeff says Parallel Eighty-Eight's cuisine is designed to bring together culinary elements from around the world and combine them with his classical French training and Western upbringing. Mediterranean flavors, Asian spices as well as the French tradition of crafted sauces can be found alongside seared venison, hand-carved Black Angus beef or Alaskan king salmon. Jeff offers a new take on the concept of "world cuisine." A fresh sea bass special will feature selections of fish from New Zealand, the Baja and the Pacific Northwest with each portion finished to highlight its own unique flavor and texture.

Another unique opportunity for Parallel Eighty-Eight diners is Jeff's Watchman Table. By reservation only, this single table is set off the restaurant's back patio, directly before Zion National Park's towering Watchman formation. Guests are treated to an off-menu, five-course tasting event while basking in the sunset. Diner preferences, allergies or other food issues are determined by consultation; then the chef goes to work, crafting new taste combinations and concepts. So far, Jeff's culinary cruise has been used for birthdays, anniversaries, friend gatherings and even a marriage proposal.

I was also fascinated to hear about the origin of the Parallel Eighty-Eight name. Jeff says in Oriental lore, eight denotes success and in Greek, infinity. He put two eights together to signify his passion and purpose as well as for good luck in achieving unending success.

With more than 16 years in the restaurant business, Jeff feels Parallel Eighty-Eight has raised the bar in service. He is excited for Springdale residents and visitors alike to try the restaurant's original dining experience.
