MINNEAPOLIS, May 03, 2005 (United Press International via COMTEX) -- Minnesota researchers say that highly unsaturated vegetable oils heated to high temperatures for just half an hour result in a highly toxic compound.
A team from the University of Minnesota, as part of a presentation set for Wednesday in Salt Lake City, will report heating such oils to 365 F for 30 minutes or more results in 4-hydroxy-trans-2-nonenal, or HNE.
"HNE is a well known, highly toxic compound that is easily absorbed from the diet," said a researcher. "The toxicity arises because the compound is highly reactive with proteins, nucleic acids -- DNA and RNA -- and other biomolecules."
HNE is formed from the oxidation of linoleic acid, and reports have related it to several diseases, including atherosclerosis, stroke, Parkinson's, Alzheimer's, Huntington's and liver diseases.
