Valter is back!! I have heard that phrase frequently from friends and business associates.

The "Valter" they are talking about is Valter Nassi, formerly with the Restaurant Il Sansorvino in the American Stores Building. The Il Sansorvino became a local favorite and when the American Stores Building was sold and the restaurant closed, there was a great deal of sadness.

Well, indeed, Valter is back. The Cucina Toscana located in the Firestone Building on Third South and Third West in Salt Lake City is open and featuring Valter and his great Tuscany food. I asked Valter if it is the same concept as his previous restaurant. He told me, "Yes, but we are less expensive. We feature great pasta, antipasto, lots of fish and great Italian cuisine." Valter then told me how proud he was of the ambiance, the service and the food. He has traveled all over the world sampling great restaurants and food and has brought the best ideas and recipes to Cucina Toscano, a Tuscan Trattoria. Valter is assisted by head chef Brian Veatch.

The manager, Michael Aaron, tells me the private dining room accommodates private parties of up to 50 people. The room has its own private kitchen and oven, and has proved to be very popular for corporate and private gatherings. "We do two or three private parties or meetings a week in this area of the restaurant," Michael says.

Cucina Toscana, which is owned by Ken Millo, also has seating for 75 patrons in the main dining room and is open for lunch and dinner five days each week and open for dinner only on Saturdays.

Utahns are fortunate to have a great selection of fine dining options. A visit to see Valter and his personalized touch at Cucina Toscana will give you a new, fine choice for your dining pleasure.
