When it comes to cooking, Jessica Davies of Passion Flour Patisserie in Salt Lake City says there isn't anything she loves more. And her specialty is pastry making. But these aren't just any pastries — they're vegan French pastries, recipes Jessica spent years perfecting.
She always loved cooking and took every opportunity to learn more about the culinary world. On a whim she decided to take a pastry making class in high school and loved is so much she later attended The French Pastry School in Chicago, where she studied under world renowned chefs who had received the prestigious ManofFrance, or MOF, the highest honor you can get for pastry making. A short time later she became vegan, so she started converting her recipes to fit her lifestyle. Once she moved to Hawaii, she had even more time on her hands so went even deeper into her new hobby.
With Passion Flour Patisserie, located at 165 East 900 South in Salt Lake City, Jessica is sharing her knowledge and skills with the general public through vegan French pastries and specialty cakes. You can now come here to experience vegan croissants, Pain au Chocolat, French Macarons or Madeleines. You'll also find local coffee and specialty cakes, like Chocolate Lavender or Strawberry Chantilly.
Jessica says the key with vegan cooking is to get the recipes to taste real and delicious. This is why she spent three years perfecting her croissant recipe and two years on the macaroon recipe used for Passion Flour Patisserie, so they'll taste exactly the way they would in France. And she's now serving those who are exploring alternative ways to eat or dealing with food allergies. The specialty food industry in the U.S. is growing rapidly and in 2014, sales topped $100 billion, an increase of nearly 22 percent since 2012, according to the State of Specialty Food Industry report.
Although Passion Flour Patisserie has only been open a short time, Jessica says it's quickly gaining a strong following, and it continues to grow.
