Get the grill fired up! These two campfire meals are perfect on the BBQ or around the campfire. And the best part, you don\'t have to do the cooking! Throw all the ingredients together, wrap it in tin foil and it\'s ready to go!
Hobo Hoagies
Ingredients:
1 loaf of Harmon\'s Classic French Bread
� lb. Mortadella (Italian Bologna)
� lb. Capocolla (Italian Ham)
� lb. Sopressada (Salami)
� lb. Oven Gold turkey breast
1 lb. Harmon\'s hand pulled mozzarella cheese
� lb. Norwegian Jarlsberg
1/3 lb. Cotswold Double Glouester w/chive and onion
� lb. Wasatch Back Jack
Olive oil, mayonnaise, mustard or whatever sandwich condiment you prefer
1-20" piece of tin foil
Directions:
- Cut the bread into slices appropriate for a sandwich but not all the way through and place on the tin foil.
- Stuff every other slice with the meats and cheeses of your choice and sandwich condiment.
- Wrap tightly and set over a medium fire or grill for about 5-10 minutes or until the cheese is melted and the meats are warm.
- Slice the rest of the way through the loaf where it is not stuffed and everyone gets the sandwich they want!
Summertime Salmon Tin Foil Supper
Ingredients:
1-6 oz. Portion of Salmon
3 Asparagus Spears
3 Lemon Slices
1 tsp. Extra Virgin Olive Oil
1 tsp. Lemon juice
� tsp. Salt
� tsp. Pepper
1-12" Long sheet of heavy-duty tin foil
Directions:
- Place lemon slices down on foil, top with salmon, then the asparagus spears, drizzle with olive oil, lemon juice, salt and pepper.
- Carefully seal the foil packet making sure to leave space for the food inside to steam, which is important, as that is how the fish and asparagus will cook.
- Place on the grill over a medium fire or grill slightly indirect from the heat is best and cook for approximately 10 minutes or 10 minutes per one-inch thickness of fish.
- Remove from the heat being careful to not get a steam burn opening the foil packet and serve either right from the packet or on a plate.
