This week's question comes from Mike:

"I love chicken wings and want to try my hand at making some for a Super Bowl Party. What is the best way to make homemade wings?"

Chicken wings and football go hand-in-hand…and they are a definite must-have for any Super Bowl party. Here is one of my favorite chicken wing recipes.

Game Day Chicken Wings

Ask a Chef: Game day chicken wings

Ingredients:2. 4 lbs. chicken wings

  1. 1 C. salt
  2. 1 C. white vinegar
  3. 1 C. Tabasco
  4. 1 large plastic container
  5. Water
The key to big juicy chicken wings is brining them overnight. Here's how:

Directions:

In a large plastic container add salt, white vinegar and Tabasco. Add the chicken wings and coat them evenly with the mix. Add enough water to cover the chicken wings, then cover the container and refrigerate overnight or 8 to 12 hours. The wings will plump in size and absorb the brine.

To prepare the wings pre-heat your oven to 375. Place the wings on a baking sheet with a lip and cook for 8 to 10 minutes. The wings are not fully cooked at this point so don't eat them yet. Set the wings aside and start to prepare the sauce. Here are a few of my favorite sauce combinations:

Basic Wing Sauce:Honey Mustard:Smokey BBQ:
1/2 C. Tabasco 1/2 C. Franks Hot Sauce 1/4 C. white vinegar 1/4 C. sugar 1 C. ketchup Salt and Pepper 1 C. honey 3/4 C. yellow mustard 1/4 C. whole grain mustard 1/4 C. sugar Salt and pepper 2 Tbs. liquid smoke 1/2 C. brown sugar 1/4 C. yellow mustard 1/4 C. molasses 2 Tbs. Tabasco

There are several cooking methods that work well for chicken wings. The oven method is a lower fat option that will help shave a few calories from your wings.

Oven Method

Divide the wings into equal amounts. Place your sauces into individual bowls and add the wings. Toss the wings in the sauce. Turn the oven to broil, place the sauced wing on a sheet pan and cook for 8 to 10 minutes or an internal temperature of 165 or above. The sugar in the sauce will caramelize and thicken coating the wings. Broiling the wings will also aid in crisping the skin of the chicken wings.

Frying your wings will give them a nice crunchy texture that can't be beat. Here are two different ways to fry your wings:

Stove Top Frying

In a large sauté pan place about a ½ inch of oil (canola, vegetable or peanut) over medium- high heat. When placing the wings in the oil use caution the oil will pop. Cook the wings on both sides until the skin is golden in color and crispy about 4 to 6 minutes. Place the wings into a bowl with sauce and coat the wings. Place the wings on a sheet pan with a lip and broil in the oven for 2 to 3 minutes or until the sauce has caramelized and thickened.

Fryer

Heat the oil to 375. Place the wings into the fryer basket and submerge the wings in the hot oil. Cook the wings 4 to 6 minutes or until an internal temperature of 165 or above. Place the wings into a bowl with sauce and coat the wings. Place the wings on a sheet pan with a lip and broil in the oven for 2 to 3 minutes or until the sauce has caramelized and thickened.

Serve your finished wings with celery, carrots and blue cheese or ranch dressing and you're ready for the big game!
