Judging from the number of emails I get from all you hardcore barbecue mavens out there, I know that KSL listeners take their barbecue very seriously. And for that matter, so do I. So it’s a thrill for me to tell you about a new barbecue discovery of mine – a discovery I owe to a KSL listener who put me in the loop about Pat’s Barbecue and Catering, one of the best barbecue shacks I’ve ever encountered.
The “Pat” of Pat’s Barbecue and Catering is Pat Barber, an award-winning grand champion pit master who slow smokes some of the best barbecue you’ll ever get your lips around. That is, if you can find Pat’s. Because getting to Pat’s is a bit tricky. Pat’s Barbecue is located on a short, dead-end street called Commonwealth Avenue which is the first right off of West Temple, just south of 21st South. So to get to Pat’s just head south on West Temple from 21st South and take the first right – that’s Commonwealth Avenue and Pat’s is at the end of the street, near the railroad tracks.
On most days you’ll find Pat Barber out in front of his little restaurant, tending to his smoker and chatting with loyal customers. He doesn’t mind sharing his secrets for making tender and delicious barbecued beef brisket, pork ribs, chicken, and his luscious pulled pork. And one of these days I’m going to find out how Pat makes his deliciously spicy yet sweet barbecue sauce – the one he calls “Sweet Heat.”
Each day in addition to his regular menu, Pat also cooks up some specials. On a recent Friday for instance the lunch special was gigantic barbecued turkey legs but he also does smoked salmon, stuffed smoked peppers, and pork loin, to mention just a few.
Unfortunately, Pat’s Barbecue is only open for lunch. But for a fantastic lunch, head to out-of-the-way Commonwealth Avenue and Pat’s smokin’ barbecue.
