For Nanette Mathieu, opening City Cakes and Café in Salt Lake City is literally a dream come true. Since the age of 18 Nanette has had a dream of owning her own cake shop. . . and now she does.
During her college years, she worked in the bakery of a grocery store as a cake decorator and loved every minute of it. It wasn't until October 2009 that her dream started coming to pass. She came across bakery equipment on sale for a great deal and approached Zions Bank with her business plan. She told me she got the loan to start the shop because Zions said they believed in her.
With the necessary equipment and a family that was willing to join her new venture, Nanette opened City Cakes and Café in January 2010.
City Cakes and Café includes all the offerings of a traditional cake and coffee shop, but the majority of the cakes and food are vegan. Nanette says it's not always about preference; many of her customers just can't eat eggs, dairy, wheat or sugar, so she wanted to help by filling that niche.
Nanette has also discovered she just can't say no to her customers. When they asked if she'd start doing breakfast and lunch, she said yes. The café lunch menu is served all day with items such as the veggie sandwich, southwest black bean burger, vegan macaroni and cheese, homemade soups and chili.
I certainly got the "wow factor" Nanette strives to create in her shop with a full range of treats including the two favorites, peanut butter bars and raspberry lemon bars. But, Nanette's primary focus is her excellent selection of wedding, birthday and event cakes. They are not only traditional but can also be vegan and gluten-free. She also does her best to use organic and eco-friendly packaging.
