Pineapple Gazpacho Serves: 4 Prep time: 10 minutes
Ingredients: 1 pineapple, cleaned and sliced 1 teaspoon turmeric ½ teaspoon cayenne 1/2 tablespoon ginger 1 tablespoon cilantro, minced Salt and pepper to taste
Directions: Blend all the ingredients together except the cilantro. Blend until smooth and fold cilantro into the mixture.
Tomato Gazpacho Serves: 4 Prep time: 10 minutes Cook time: 10 minutes
Ingredients: 14 roma tomatoes, halved 6 scallions 1 cup fresh lemon juice 1 clove garlic 1 tablespoon smoked paprika 1 tablespoon cumin seed, toasted Smoked salt and pepper to taste
Directions: Oil the tomatoes and scallions and grill until tender. Place all the ingredients in a blender and blend until smooth.
