It’s a new year once again, and we are all thinking of ways to be more healthy. It’s easy to start off strong and then get bored of eating the same old things. The one thing that keeps me most motivated in choosing nutritious food is keeping things new and fresh. I find that if I don’t continually brainstorm new ways to eat my favorite foods, I am not as healthy.

Eggs are, of course, always a star ingredient in my house. We eat my family’s Oakdell Omega-3 brown eggs daily because they are packed with protein and Omega-3 fatty acids. And since we eat eggs so much, I love to try new recipes and pair different ingredients.

A new favorite in my family is a recipe that pairs eggs with tomato and spinach on flatbread. This recipe is seriously great for any meal of the day. We make it in individual servings, so each person has their own. It’s the same concept as a personal pizza. Each serving has two eggs, so that’s 12 grams of protein right there. Not to mention the added protein and nutrition from the other ingredients — spinach, tomatoes and cheese. And you can always customize each individual portion with other favorite ingredients. We’ve tried adding lean ham or lean turkey sausage for even more protein. That was delicious, too.

Egg, Tomato and Spinach Flatbreads

Ingredients

Makes 4 servings

  • 8 Oakdell Omega-3 brown eggs
  • 2 T. finely shredded Parmesan cheese
  • 4 individual flatbreads
  • 2 tsp. olive oil
  • 1 cup grape or cherry tomato halves
  • ½ cup thinly sliced spinach
  • ¾ cup shredded Italian cheese blend or mozzarella
  • Season with salt and pepper and crushed red pepper, if desired

Directions

1. Heat oven to 450 degrees.

2. Coat a large skillet with cooking spray and heat over medium heat.

3. Beat eggs and Parmesan cheese in a medium bowl until blended. Pour eggs into skillet. As the eggs begin to set, use a spatula to lift and fold the eggs. Remove from heat as soon as the eggs are cooked through.

4. Place flatbreads on baking sheets. Lightly brush the top of each flatbread with olive oil.

5. Top each flatbread with eggs, tomatoes and spinach, dividing evenly. Season with salt and pepper. Sprinkle the Italian cheese blend or mozzarella over the top.

6. Bake in the 450-degree oven until cheese is melted, about 5 minutes.

7. Cut each flatbread into pieces and serve immediately.
