CHICKEN RATATOUILLE
INGREDIENTS
1¾ T Olive Oil
1½ T Garlic,Chopped
½ c Yellow Onion,Diced
½ c Green Bell Pepper,Chopped
½ c Red Bell Pepper,Chopped
1¼ c Yellow Squash, Sliced,Half
1¾ c Fresh Eggplant,Diced
½ c White Cooking Wine
1¼ c Tomato Sauce
¾ c Chicken Broth
5 ea Grilled Chicken Breast,Cooked,4oz
2½ Black Pepper
1½ Ground Oregano
1½ tsp Fresh Basil, Chipped
5 ea Fresh Basil,Leaves
DIRECTIONS
1. Heat olive oil in a saute pan, over medium heat, add garlic and onion; saute until lightly browned.
2. Add the peppers, squash, eggplant and diced tomatoes; saute until vegetables are tender. Deglaze the pan with white wine.
3. Add tomato sauce and broth; continue to cook until heated through. Add the sliced chicken breast.
4. Season with black pepper and herbs; cook for additional 2 minutes.
PLATE ASSEMBLY
5. Per portion, serve 12 ounces of ratatouille, garnish with a fresh basil leaf.
