Morning Glory Jaffle
Ingredients:
2 slices of white or wheat bread
3 egg whites
1 c. spinach leaves
1 Tbsp caramelized onions
1 Tbsp goat cheese
salt and pepper to taste
Method
Saute the onions with olive oil, touch of sugar, vinegar, S&P.
Add spinach leaves and goat cheese, stir for 1 min.
Cook egg whites on low heat to form a scramble.
Place the fillings inside the middle of the sliced bread. Close the sandwich.
Place the sandwich in the pre-heated, non-stick Jaffle iron and toast on the grill until golden brown around 5-6 min.
