Turkey & Yam Curry
Gluten Free Yield: 5 Servings
Ingredients: Turkey & Yam Curry
2-1/2 tbsp. Fresh Ginger Root, Chopped Finely
2-1/2 tbsp. Fresh Garlic, Chopped
1 tsp. Crushed Red Pepper
2-1/2 tbsp. Curry Powder
1-1/4 cup Plain Yogurt, Low Fat
1/4 cup Fresh Cilantro, Chopped
2 cups Fresh Roasted Turkey Breast, Cooked, Diced (10 oz. White Meat)
2 cups Fresh Yams, Diced
1-1/4 tbsp. Olive Oil
1-1/4 cup Fresh Yellow Onion, Chopped
1 cup Fresh Tomato, Chopped
3-3/4 tbsp. Brown Sugar
2-1/2 tbsp. Half & Half Creamer
¼ cup Fresh Cilantro, Chopped
Preparation:
1. In a bowl; combine the ginger, garlic, pepper flakes, curry powder, yogurt and cilantro; stir to combine.
2. Add the cooked diced turkey; toss well.
3. Cover and refrigerate overnight.
4. Steam or boil the yams until tender.
5. Heat oil in a large skillet over medium heat.
6. Add the onions; cook until translucent.
7. Stir in the turkey mix, yams, chopped tomatoes, sugar and half & half; cook until heated through.
Plate Assembly:
Serve 1-1/2 cups of Curry in a bowl topped with 1 tbsp. chopped cilantro per serving.
