This week's question comes from Stacy:

"My family is getting tired of plain old grilled chicken for dinner. Do you have any recipes that will kick our chicken up a notch and help my family actually look forward to chicken night?"

We eat a lot of chicken at my house too. The wonderful thing about chicken is that it is affordable and versatile. The key to making a delicious chicken recipe is to buy quality chicken, such as Harmons Recipe Ready chicken (on sale this week too!), then surprise your family with unique tasty preparations they aren't expecting. Here are a few of my favorite recipes:

Chicken Saltimbocca

Ingredients:2. 4 6 oz. Harmons Recipe Ready chicken breasts

  1. 8 thinly sliced Creminelli prosciutto
  2. 1/2 cup flour
  3. 12 sage leaves (4 minced, reserve 8)
  4. 1 1/4 cup white wine (you can use traditional wine, or try (Fre brand non-alcoholic wine available at Harmons)
  5. 1/2-1 lemon, juice and zest
  6. 4 large pats of butter, chilled
  7. Fresh parsley, minced
    Directions:

    1. Season flour with salt and pepper, toss in minced sage. Lightly coat chicken pieces with flour mixture by dredging then patting off excess. For extra sage flavor, sprinkle extra minced sage on to chicken. Wrap the top of each piece of chicken with 2 prosciutto slices (avoid overlapping). 2. Heat large sauté pan to med high heat. Coat the bottom of pan with oil. Add extra sage leaves and lightly fry. Remove from oil and drain on towel. 3. In same pan add chicken breast presentation side down. Allow prosciutto to crisp and edges of chicken to brown. Carefully flip keeping prosciutto and chicken together. Sauté chicken for 4-5 more minutes. Remove from pan and allow to rest. 4. Add white wine to sauté pan deglazing and reducing, about 5 minutes. Remove form heat and whisk in chilled butter. Season with salt and pepper. Add parsley 5. Plate chicken, ladle with sauce and garnish with 2 crisp sage leaves. Brandy Dijon Chicken

Ingredients:2. 4 6 oz. Harmons Recipe Ready chicken breast

  1. 2 teaspoons shallots, minced
  2. 3-4 tablespoons brandy (optional - may be substituted for honey)
  3. 2-3 tablespoons Dijon mustard
  4. 1 cup heavy cream
  5. 2 teaspoons parsley, minced
    Directions:

    1. Mix the flour with the 1 teaspoon each of salt and of pepper. Dredge the chicken in the seasoned flour and shake off the excess. 2. Heat the clarified butter in a skillet and add the chicken and sauté over medium heat for 5 minutes. Turn the chicken and sauté for 3-5 more minutes or until just done.

3. Remove from the skillet and keep warm in the oven. Discard any butter left in the pan.

4. Add the shallots and brandy to the pan; turn the heat to high and reduce the liquid to 3 tablespoons while stirring to scrape up any browned bits.

5. Whisk in the mustard. Add the cream and cook over medium-high heat for 2-3 minutes, stirring occasionally, until mixture is the consistency of a light gravy. Season with salt and pepper.
