3 local food trucks cooking up an unforgettable summer

SALT LAKE CITY — This is my absolute favorite time of the year.

The sun is shining again, the school year is complete, and everybody is anxious to get out and have some fun. If you’re anything like me, you have your summer mapped out. A few family outings, a couple of weddings to attend, a birthday or two to throw, and the list goes on.

With fun in mind, try a food truck. They have taken Salt Lake City and Utah County by storm. Trending all over the country, food trucks are a great way to enjoy the nice weather, try new cuisines and get the entire family involved.

What’s best about food trucks is their mobility. You can catch one in your area just by following them via social media. If you don't go to them, they come to you! Food trucks cater events and parties. Some of the more popular occasions requesting food trucks have been weddings, family reunions, corporate events and private dinner parties. Pricing for these catered events varies, so the best thing to do is call the food truck. In most cases, food trucks are flexible with adapting to your specific event and budget.

Among many others in your area, give these a try. They’re guaranteed to add fun and delicious eats to your summer.

Kitchen Eighty-Eight

Kitchen Eighty-Eight will fill you up without making you feel the afternoon slump. Brandon Clark, owner and chef of Kitchen Eighty-Eight, says, “The food at Kitchen Eighty-Eight is hearty but doesn’t make you feel heavy. You can get a quality meal without feeling awful afterwards.”

Variety sets Kitchen Eighty-Eight apart, with items from “Off The Grille,” “From The Garden” and “Something Sweet.” There are meals and treats for everyone.

A great recommendation is the Tri-tip Steak, which comes with a side of mashed potatoes, sugar snap peas and your choice of sauce. A great selection of sauces includes Peri-peri, an African birds eye chili and Chimichurri, a mixture of parsley, cilantro and mint. For the lighter side, there’s a sweet mustard sauce that has the perfect blend of honey and wholegrain mustard. A nice variety on the menu will have you coming back many times.

Marley’s Gourmet Sliders

Visiting Marley’s truck for a meal is a must, but they’re also great for catering. Try them for a wedding reception or block party.

Marley’s is the perfect food truck to feed a crowd of various likes and dislikes. With a little bit of this and a little bit of that, you can offer options that will leave everyone feeling satisfied.

Try their Basic Slider packages. A meal comes with two sliders, two meat choices, including chicken, hamburger, hot dog, turkey or steak, fries and a drink. For a larger event, check out Marley’s catering menu.

Marley’s has two physical locations, one at The Shops At Riverwoods and the other on Geneva Road in Lindon. You can find their mobile food truck by following their Facebook page or Instagram account.

Kona Ice

I get nostalgic thinking about slushies in the summer. Kona Ice is a great place to create sweet memories in the bright summer sun.

Kona Ice caters at a range of events, from large to small. Having Kona Ice roll up to your next event, birthday party or soccer game would be the cherry on top of a truly awesome day. You can check out their catering accommodations on the company website.

Everything is delicious, but you can't go wrong with Tiger’s Blood or Wild Watermelon flavors.

These are just three of my favorite trucks — for more local food trucks, check out the Food Truck Roundup held every Thursday from 6 to 9 p.m. at the Startup Building in Provo. Stay up on weekly roundups with the Food Truck Underground or visit Food Truck Thursdays on Gallivan Avenue in Salt Lake each Thursday from 11 a.m. to 2 p.m.
