EATS Park City program teaches students healthy life skills

PARK CITY — From farm to fork, EATS Park City (Eat Awesome Things at School) and Intermountain Healthcare have teamed up to educate students on how to eat healthy.

The program challenges elementary through high school students to go beyond their food comfort zones and try new foods they normally wouldn’t. Lisa Allison with the EATS program says it’s important to start healthy habits early on.

“Adult diseases are now being found in children that weren’t there before and we can track these back to poor lifestyle changes and poor lifestyle habits,” she said.

As part of the program, Intermountain chef Jason Kieffer uses recipes that result in healthy dishes sure to satisfy even the pickiest of eaters.

“In the beginning they’re always turned off by the vegetables and so forth, but once they see how they can apply those vegetables into a tasty dish and taste it, they say, 'Wow! This tastes pretty good.'”

Kieffer said the interactive lesson, packed with cooking tips and laughs, is a win-win situation.

“Not only do they have a lot of fun, but they can’t wait to take this recipe home and create it with their parents. It’s a tool that should be gifted to them and used for the rest of their lives,” he said.
