Thanksgiving leftover casserole

Serves 12

Ingredients:

4 cups stuffing

4 cups leftover turkey chopped up into bite size pieces

2 cups leftover green beans

3 cups leftover mash potatoes

1 cup shredded Parmesan or Gruyere cheese

¼ cup butter unsalted

1 can cream of mushroom soup or cream of chicken soup

2 tsp fresh chopped rosemary

2 tsp fresh chopped thyme

2 tsp smoked paprika

Directions:

Place a layer of stuffing along the bottom of a buttered 9x13 baking dish. Mix turkey, green beans, soup, thyme and rosemary together in a bowl and mix until incorporated. Layer on top of the stuffing.

Gently warm potatoes in the microwave for a minute to soften. Melt butter in a saucepan and mix with mashed potatoes and cheese until smooth. Spread a layer of mash potato mix onto the top of the turkey mixture.

Sprinkle paprika over the top and bake in a preheated oven at 350F until potatoes have started to brown at the edges and the casserole is heat through to an internal temp of 165F (Approximately 35 to 40 minutes).

Pecan Pie Shake

Ingredients:

4 cups quality vanilla ice cream

1 cup of pecan pie

2 cups milk (you can reduce this for a thicker shake)

Directions:

Add all ingredients to blender and blend until milk shake consistency.

Serve immediately.

Pumpkin Pie Breakfast Bake

Serves 6-8

Ingredients:

2 cups leftover pumpkin pie cut into 1" chunks

2 cups old fashion rolled oats

1 tsp cinnamon

1/2 tsp nutmeg

Pinch of ground clove

2 large eggs

2 cups half and half

1 tsp kosher salt

1 tsp vanilla extract

1/4 cup maple syrup (grade b- not pancake syrup)

Directions:

Preheat your oven to 365F and grease a 9x13" casserole dish.

Chop pie into 1-inch chunks (don't worry if it gets messy we are going to mix this all together). In a large bowl add the oats, nutmeg, cloves, cinnamon, and salt- mix together. In another bowl add all of the wet ingredients together and mix until it's well blended.

Add the mixed wet ingredients to the dry and stir until incorporated. Now fold in the pie pieces until just incorporated trying to leave them in recognizable chunks.

Pour into casserole dish and bake until set- approximately 40 to 45 minutes.

You can also refrigerate the mix overnight to meld the flavors and hydrate the oats.

Serve with vanilla bean ice cream for an extra treat!
