PROVO — The food-truck scene is alive and well in Utah County with a large gathering every Thursday evening. If you are looking for new food options or if you like the idea of having a portable meal rolling around close by, here are six food trucks you should try in Utah County.

The Food Truck roundup is every Thursday from 5 p.m. to 9 p.m. at the Startup Building at 560 S. 100 West in Provo.

Sweeto Burrito ==============

Started as a chain in North Dakota, the Sweeto Burrito finally arrived in Utah in 2013 in the form of a food truck. As the name implies, the menu consists mainly of burritos and the food truck offers nine varieties that are made from scratch in the truck.

The most popular is the namesake of the food truck, the Sweeto Burrito. This burrito offers a blend of sweet shredded pork, lime rice, black beans, pepper jack cheese, a creamy sauce and a cilantro ranch. While not as big as a Cafe Rio burrito, the Sweeto Burrito is very filling with a half-pound “lightweight” option or a full-pound “heavyweight” option.

The White Chick burrito also offers a lot of flavor, but combines the sweet flavor with a touch of spiciness. This burrito has the same ingredients as the Sweeto Burrito, but it swaps the pork for shredded, marinated chicken and adds sour cream.

Macarollin ==========

This food truck takes traditional macaroni and cheese to the next level. The franchise started in New York, but the food truck is the first introduction of the gourmet mac n’ cheese in Utah. The first food truck in Utah was started by the Macarollin corporate chef who trains the franchise chefs and now there are three food trucks to be found throughout Utah County.

While the dishes weren’t as creamy as I had anticipated, they pack a ton of flavor and are extremely unique. Each dish is topped with cheese and homemade croutons to coordinate with the flavor. The most popular is the Classic Mac that combines New York-aged cheddar cheese with gruyere, fontina and toasted thyme to create an herb flavoring for the noodles. It is topped with crispy cheddar bread crumbs.

If you are craving buffalo wings? Don’t worry, Macarollin provides that flavor too. its Buffalo Chicken Mac sprinkles blue cheese chunks and celery seed bread crumbs over chipotle hot sauce noodles and pulled smoked chicken.

Waffle Love came into existence after a banker decided to switch out his tie for a chef’s hat, and the world is glad that he did. Once you try one of these Liege waffles, you will never be satisfied by a Krusteaz mix waffle again. The carmelized waffle adds a small crunch to your bite while still maintaining the soft interior. With a variety of fresh-fruit toppings, real whipped cream, Nutella and biscoff, your mouth will rejoice with the sugary goodness. It’s a perfect snack and/or meal for a late afternoon.

The restaurant has a store in Provo, a Utah County food truck, a Salt Lake City food truck and a food truck in Maricopa County, Arizona. Waffle Love also has plans to open a food truck in Ogden and St. George soon.

After operating as a trailer at farmers markets for six months, Fiore Wood Fired Pizza launched its first food truck in Utah in 2013. The mobile Italian pizzeria offers fast, wood-fired pizzas with a fresh, made-from-scratch taste. The pizzas are cooked for 90 seconds in the 750 degree Neapolitan wood-burning oven.

The most popular is the Margarita pizza with tomato sauce, fresh mozzarella, basil and sea salt all acquired from local vendors. The crunchy, light crust offers the perfect vessel to carry all the fresh toppings into your happy mouth. The New Yorker is a meatier option with tomato sauce, mozzarella, ricotta, pepperoni and sausage.

After opening earlier this year, The Mouse Trap has taken Provo by storm with its artisan grilled cheese sandwiches. Owner Dave Dinsbach combines a unique infusion of flavors in each sandwich and gives them interesting names like The Nicolas Cage and Dave’s Spicy Crack.

The Nicolas Cage offers a surprising combination of foods with apple slices, pulled pork, lettuce, sharp cheddar and a brown sugar glaze. It might sound a bit funky to throw those different items on a sandwich, but trust me — it’s delicious. Dinsbach’s unique take on grilled-cheese dishes will make you question your own boring melted Kraft slices on white bread.

After growing up working at his father’s barbecue restaurant in North Carolina, Charlie Hurdle knows how to do southern barbecue. He moved to Utah in 1988 to work as a real estate broker, but his passion for barbecuing never left him. He opened six different barbecue joints over 20 years, eventually settling on the Charlie Boys Pit BBQ food truck.

The pork is smoked in a giant, pink pig-shaped smoker over apple and cherry wood. Charlie Boys Pit BBQ offers traditional pulled pork sandwiches with coleslaw and pulled pork over sticky rice. They recently added a Carolina Redneck Rap to the menu that includes barbecue baked beans, pulled pork and sticky rice all wrapped in a tortilla.

After losing a daughter to addiction, Hurdle now donates 10 percent of all of his gross sales to the Steps Recovery in Spanish Fork. Every donated dollar is matched by the recovery center.
