This is Chris Redgrave for Zions Bank Speaking on Business.

Did you know saffron is considered to be one of the most expensive spices in the world? It can take up to 75,000 saffron blossoms to produce a single pound of saffron spice. Since saffron is mostly cultivated and harvested by hand, so it involves a high amount of labor, that's the reason for the cost.

Saffron Valley's specialty is offering a diverse selection of Indian foods rather than concentrating on just one region....From the north comes tandoori (tan-door-ee) dishes, baked in the clay oven....From the South, it's Dosas, a batter made from lentil beans and rice, then soaked overnight to form into dough.... And the East Indian Kati (kah-tea) rolls are not to be missed... She also has a selection of Indian street foods that her customers love. Of course there are traditional curries and Naan breads as well.

As for dessert? One of the favorite ones you'll find at Saffron Valley is gulab (goo-lahb)-jamen (jaw-men). This is a sweetened dough ball served with rose water.

It was almost three years ago when Lavanya turned her passion into a business and opened Saffron Valley in South Jordan....And, as of today, the Indian restaurant has been so well received that just six months ago she opened a second location, on E Street and South Temple in Salt Lake City....Interest in the new location has been high with a full buffet for lunch, but dinner is even busier than lunch. She's also expanded her catering operation with the new location.

Lavanya is so dedicated to sharing the food from her homeland that she also started a line of her own spice blends so it's easier for people to cook Indian food at home....

With Saffron Valley's two locations, they're adding to the important development of job creation and keeping Utah's unemployment number as one of the lowest in the U.S.
