4 Italian sausages
1 Tbsp olive oil
1/2 cup chopped onion
2 minced garlic cloves
3/4 cup chicken broth
14 1/2 oz can diced tomatoes
4 cups cooked white beans
1 tsp sage
1 tsp parsley
2 cups baby spinach
Salt and pepper to taste
Sauté the sausages in a large skillet until cooked. Slice and set aside.
Heat olive oil, add chopped onion and sauté for 4 minutes, then add the garlic and sauté for 1 minute more. Add the sausage, chicken broth, and diced tomatoes. Mix in the white beans, sage, and parsley.
Bring the mixture to a boil, simmer for 5 minutes. Add 2 cups spinach and salt and pepper to taste. Cook until spinach is wilted, about two minutes.
Serves 5.
