HONOLULU (AP) — The Hawaii Department of Health has fined a Honolulu noodle restaurant for breaking food safety rules and for taking down a sign that stated the violations.
The Department of Health announced the fine Monday against the restaurant known as Iyo Udon in Ala Moana Shopping Center.
Inspectors say the restaurant's employees weren't properly washing their hands. They also say ready-to-eat foods were not protected from cross-contamination by raw foods.
The department posted a yellow placard listing seven major food violations outside the restaurant in late August. But officials say a restaurant manager removed the sign for a weekend.
Iyo Udon was fined $11,000 for breaking the rules and removing the sign.
Officials reposted the placard a few days later and hung a new sign when the restaurant passed its inspection.
