This week's question comes from Marcus:

"My favorite restaurant makes a delicious steak sandwich. I'd love to try to make one at home, but I'm not sure where to start. Do you have any ideas?"

Nothing beats a savory steak sandwich. I like to pack mine with flavorful mushrooms, onions and garlic and top it with blue cheese mayonnaise. It can take a little bit of time to prepare, but the result is absolutely worth it.

Chef Johnny's Steak Sandwich (Serves 2) Ingredients:

  1. 1 to 2 New York Steaks (thick cut)
  2. 1 lbs. cremini, button and Portobello mushrooms
  3. 1 tsp. mince garlic
  4. 2 Tbsp. olive oil
  5. 1 Tbsp. butter
  6. 1/2 white onion, sliced
  7. ¼ C. dry sherry
  8. ½ C. blue cheese crumbles
  9. 2 hoagie rolls
  10. ½ C. mayonnaise
  11. 2 Tbsp. fresh parsley chopped
  12. Salt and Pepper Directions:

Ask a Chef: Savory steak sandwiches

1. Pre heat oven to broil.
2. Place the New York steaks on a plate and salt and pepper both sides. Allow steaks to rest while you prepare the mayo and mushrooms.
3. Heat a medium sauté pan to medium high heat.
4. Place the olive oil and butter into the hot pan, allowing the butter to melt.
5. Add the garlic and white onions to pan and cook for 3 to 4 minutes.
6. Add the mushroom mix to the pan and sauté for another 2 to 3 min or until everything has caramelized or turns light brown around the edges.
7. Once the onions and mushrooms have caramelized, deglaze the pan with the dry sherry (sherry may flame when placed in the pan).
8. Remove everything from the pan and place it into a bowl. Cover with clear wrap and set aside.
9. In a small bowl add mayonnaise, 1 Tbsp. blue cheese crumbs and 1 Tbsp. parsley.
10. Lightly mix with a spoon and set aside.
11. In the same sauté pan reheat over medium-high heat and place the New York Steaks into the pan allowing them to cook for about 3 to 4 minutes without flipping.
12. Flip over steak and cook for another 3 to 4 minutes for a total of 6 to 8 minutes.
13. Place the steaks aside and allow them to rest for 6 minutes to help steak retain juice.
14. Prepare your hoagie rolls by slicing sandwich pocket along one side.
15. Place 1 Tbsp. of the mayonnaise onto the bottom half of the roll and set aside.
16. Slice your New York steak on a cutting board into thin slices (about ½ inch thick). The meat will be quit raw and red in color.
17. Place the steak on the bottom half of the roll, then top the steak with the mushroom and onion mix.
18. Top the steak with the remaining blue cheese crumbles and place onto a sheet pan and into the oven set on broil.
19. Broil the sandwiches for about 3-4 minutes. This will toast the roll, caramelize the cheese and cook the meat to about rare to medium.
20. Remove from the oven, garnish with the remaining parsley and serve.

You can also top your sandwich with grilled peppers, tomatoes, green chilies, pepper jack cheese, or any of your other favorite toppings. I like to serve my steak sandwiches with kettle chips, a fresh green salad or Harmons potato salad. It is the perfect meal just about any night of the week, and is always a hit with my family.
