In honor of World Health Day, we thought we'd focus on better ways to eat healthy. Sneaking those foods into your diet that are really quite good for you. But Zest Restaurant & Bar shows us some classic vegetarian recipes full of flavor and so easy to make.

Zest Kitchen & Bar is a vegetarian, gluten-free restaurant. Zest owner, Casey Staker, says they focus on using fresh, organic whole-ingredients in all their recipes. The restaurant also has a full service bar featuring hand crafted, fresh juice cocktails with one of the largest selections of gluten-free beers & liquors. On the weekends, the restaurant brings in deejays and has dancing.

Zest healthy quinoa lunch bowl

2 cups fresh orange juice

1 cup olive oil

1/4 cup fresh lime juice

2 tbs shallots (or garlic)

2 avocados, peeled

2 tbs curry powder

1 tbs turmeric

2 tsp sea salt (we prefer himalayan or utah real salt)

INSTRUCTIONS: Put all of these ingredients into a blender & blend away until smooth. Cook quinoa, drain quinoa, add to a saute pan with your choice of 2 cups of vegetables & coat the quinoa & veggies with as much dressing as you see fit. Remember it will be high in fat but it's good fats, so we say, carry on!

Zest healthy "cheesecake"

crust

• 3/4 cup pitted dates

• 1/2 cup walnut pieces

• Dash salt

• 1/2 tsp salt

• Water if needed

filling

• 2 1/2 cups raw cashews, soaked overnight

• 1 tbsp vanilla extract

• 1/2 cup pure maple syrup

• 1/3 cup melted unrefined coconut oil

• 3/4 cup lemon juice

• zest of 1 lemon

• 1/8 tsp salt

INSTRUCTIONS: Combine all crust ingredients in a food processor an pulse until finely chopped and well combined. Line a springform pan with parchment and press the crust ingredients firmly into the bottom of the pan. Combine all filling ingredients in a high-quality food blender and process for 6-7 minutes, stopping occasionally to scrape down the sides. Pour the filling over the prepared crust in a oiled or parchment lined springform pan. Place the cake in the freezer for 2 hours to set. Thaw for 20 minutes before serving.
