Corner Bakery opened their fifth store to the Ogden neighborhood at 4315 Harrison Blvd., across from Weber State University.
Corner Bakery shows how to make their warm apple and cranberry topping for their buttermilk pancakes.
Recipe for Warm Apple and Cranberry Topping (yields 3 cups):
4 cups Apples (approximately 4 large Granny Smith or other baking apples)
1/2 cup Frozen Cranberries (can substitute dried cranberries)
4-6 Tbsp Brown Sugar (depending on desired sweetness) 2 tsp Cinnamon
1/3 cup Pure Maple Syrup
3 Tbsp Butter
1 ½ cups Water
1. Peel and slice the apples and measure out all ingredients.
2. Heat a four-quart saucepan and add sliced apples, cranberries, butter, brown sugar and maple syrup.
3. Mix together, then stir in water.
4. Bring to a boil. Reduce heat and let simmer for 10-12 minutes, stirring occasionally, until the liquid reduces and the apples and cranberries soften but still have texture.
5. Serve immediately. Can be cooled and reheated.
Great served over pancakes, oatmeal or even pound cake.
