Faustina's Chicken Parmesan Sandwich

(Serves 6) Pre-heat oven to 400 degrees.

Ingredients: • 6 ciabatta rolls

• Fried Chicken o 6 4 oz. cleaned chicken breast o 1 cup canola oil o 1 cup flour o 2 cup Panko bread crumbs o 4 eggs o Salt & pepper to taste

• Pesto Sauce o ½ lb basil o ¼ cup chopped garlic o ¼ cup ground Asiago cheese o ½ cup pine nuts o 1 cup olive oil

• 1 lb fresh Mozzarella cut into ½ inch slices

• 12 oz marinara sauce

Preparation

Place flour, eggs (beaten) & Panko crumbs in 3 separate mixing bowls. Coat chicken breast in flour first, eggs second & Panko crumbs third. Set aside.

Bring Canola oil to high heat in a sauté pan. Pan fry breaded chicken breasts 3 minutes each side, until golden brown. Finish in oven if necessary. Salt & Pepper to taste.

Combine basil, garlic, asiago cheese & roasted pine nuts in food processor. Blend slowly while drizzling olive oil, until fully incorporated.

Pre-heat oven to 400 degrees.

Cut Ciabatta rolls in half.

Spread pesto sauce and place fried chicken on the bottom half.

Place Mozzarella on top half & bake both sides face up for 5 min.

Top with marinara sauce.
