On today's menu...apricot raspberry salmon.

INGREDIENTS

6 oz. Organic King Salmon (Other Salmon or Chicken Breast will do)

3 oz. Hive Winery Raspberry Peach Wine (Layton, UT)

1oz. Clarified butter

Dusting of seasoned flour (Seasoned Flour: pinch of black pepper, table salt, garlic powder)

1 oz. Craisins

1 oz. Dried Apricots (sliced)

3 oz. Chicken broth

1 oz. Brown Sugar

1 oz. Butter (sweet cream salted)

2 oz. Spring Mix

1 oz. Sliced Almonds

1 Big Strawberry (sliced)

1 oz. feta cheese

DIRECTIONS

In a pan heat clarified butter. Coat the salmon in seasoned flour and add to pan (lay away from the body to avoid hot splatter. Add Dried Apricots (sliced), chicken broth, Craisins, and the fruit wine. Bring to a boil and add brown sugar and add sweet cream butter. Cover and reduce heat for about 7 mins. In a salad bowl add spring mix and craisins and sliced almonds leave some almonds for the top. In a salad bowl add spring mix and strawberry (sliced), feta, and sliced almonds (leave some almonds for the top. Place the salmon on top and the sauce over the salad.
