Quick and Easy Chili

This chili is a perfect recipe for the busy family. It is quick and simple and makes a hearty meal, especially great to serve during the cold winter months.
3 lbs. lean ground beef
1 large onion, chopped
2 cans (15 oz. each) Ranch Style Beans
2 cans (20 oz. each) enchilada sauce
1 can (14.5 oz.) diced tomatoes
1/2 tsp. chili powder
1/2 tsp. cumin
1. Brown the ground beef and chopped onion together. Drain any grease and place mixture in a large cooking pot.
2. Stir in beans, enchilada sauce, diced tomatoes, chili powder, and cumin. Add more seasoning (chili powder and/or cumin) to taste if desired.
3. Simmer until thickened.
4. Serve with grated cheese and bread.
5. Serves 8-10
Note: Ranch Style Beans are a brand name of baked beans that works well in this recipe. Other brands of canned baked beads also work great in this recipe and can be substituted. This chili is a very meaty chili and if desired, 1 lb. of hamburger can be omitted and one extra can of beans added. Freezes well.
