SALT LAKE CITY — Who hasn't looked at a recipe on Pinterest and thought, “Hey, that looks delicious and easy; I'll try that."

Just like you, we at KSL.com want to know what recipes are keepers and the ones that need to be buried deep within the depths of the internet. Fortunately for you, the KSL.com team is going to try out various recipes we find on Pinterest (or ones sent to us), make them exactly as described and then write about the experience.

Each of us on the KSL.com team has varying degrees of interest and skill levels when making and preparing food. Basically, what I'm saying is we’re not pros, which makes us just average people trying to make delicious food and hope it turns out well in the process. Will we fail at some recipes? Sure. Will some of the recipes fail us? Oh, most definitely. Hopefully, though, we can find some great recipes to try or to have a better sense of the ones to avoid.

Mashed potato waffles

Mashed potatoes and waffles are two of the most amazing foods, so why not combine the two? When I saw a recipe for “mashed potato waffles” from Joy the Baker on Pinterest, I knew I had to try it.

Some people may wonder whether mashed potato waffles are a breakfast food or an entree for later in the day. Personally, I ate the first batch for dinner and leftovers for breakfast the next morning. The savory waffles heated up well and tasted pretty fantastic with salsa, as the recipe’s creator recommended.

Ingredient list
  • 4 tablespoons unsalted butter
  • 1/4 cup buttermilk
  • 2 large eggs
  • 2 cups mashed potatoes (however you make them)
  • 3 tablespoons chopped chives
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon garlic powder
  • 1 cup grated cheddar cheese

Mixing the ingredients together is really straightforward and cooking the batter in the waffle iron is fun. After that step, all you have to do is sprinkle some chives and cheese on top to melt in the oven. The waffles can get a little soggy if you let them sit too long, so putting them in the oven quickly and then using a cooling rack at the end can make a big difference.

Overall, the recipe was incredibly easy for someone like me, who doesn’t cook often, to follow. It was also tasty. My only hesitation for wanting to make it again lies in the fact that the recipe requires ready-made mashed potatoes — which are so delicious that it can be hard to resist eating them before putting them into the mix. If you’re someone who has leftover mashed potatoes and don’t know what to do with them, then this recipe is perfect for you.
